Happy Friday everyone! This post is dedicated to anyone looking for an easy meatless meal alternative. These quinoa patties are super easy to make and can be prepared in advanced, frozen and saved for a later chow down. Here is how its done.
2 1/2 cups cooked quinoa
1 large sweet potato
1/2 cup bread crumbs
1/2 cup finely chopped bell peppers
2 garlic cloves minced
1/4 cup chopped cilantro
1/2 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon salt (to taste)
1/2 teaspoon crushed red pepper (optional)
Start by boiling your quinoa (I cook it like pasta in salty water), drain and set aside to cool. Next cook your sweet potato either in the microwave or in a pot of water until very tender. Peel the outer skin and allow to cool. Gather the rest of your ingredients and combine all with your hands (yes your hands, its so much easier)
Take the mixture and make your patties
Fry in vegetable oil until brown and crispy
